Shrimp with Mint & Cilantro

100g shrimp, 2 tbs fresh cilantro finely minced, 1 tbs fresh mint finely minced, 1 tsp fresh Italian parsley, 1 clove garlic crushed and minced, 2 tbs lemon juice, salt and pepper to taste, Stevia is optional.  

In a small frying pan, fry up the garlic in the lemon juice, add shrimp, cilantro, mint and parsley.  Stir fry together until is cooked and coated with herb mixture.  Add a little extra water or lemon if necessary.  Garnish with lemon wedges.

Buffalo Style Chicken Fingers

100g of chicken, cut into long thin strips, Melba toast crushed, 2tbs hot sauce, 4 tbs lemon juice and salt and pepper to taste.

Marinate chicken strips in lemon juice and salt.  Coat chicken strips with Melba crumbs.  Fry in frying pan until lightly browned and cooked thoroughly.  Toss with hot sauce and black pepper to taste.  Serve as finer food or as an entree.  serve with raw celery sticks or desired vegetables.

Cheesy-Good Cornbread Muffins

Cheesy-Good Cornbread Muffins

Per serving (1 muffin): 85 calories, 1.5g fat, 14g carbs, 1g fiber, 2g sugars, 4g protein

 

Ingredients:

1 c canned cream style corn

2/3 c all-purpose flour

1/2 c yellow cornmeal

1/2 c fat free liquid egg substitute

1/2 c fat free sour cream

1/2 c shredded reduced fat cheddar cheese

1/4 c chopped scallions

2 tbs splenda no calorie sweetener (granulated)

1 1/2 tsp baking powder

1/4 tsp salt

optional: 1/4 tsp hot sauce

 

Directions:  Preheat over 375,  In a large bowl, combine flour, cornmeal, splenda, baking powder, and salt  until mixed well.  In a small bowl, mix together all of the other ingredients: corn, egg substitute, sour cream, cheese, and scallions.  Add the hot sauce, if you like.  

Add contents of the small bowl to the large one and stir until mixed thoroughly.  Line a 12-cup muffin pan with baking cups and/or spray with nonstick spray.  Evenly distribute muffin batter among the cups.  Bake in the oven for 15-20 mins, until muffins are firm and light golden brown.  Allow to cool for a few mins, and then enjoy!
